    Pulled Pork Burritos....
    No photos but I will do it again.

    Recipe is simple though.
    Get a nice shoulder of pork, trim the fat, pop it in the slow cooker in a shitload of BBQ sauce of about 10/12 hours on low.

    Take out of sauce, pull pork. I griddled / charred the meat on the pan with some nice spices to get it a bit smokey and burnt round the edges, only a few minutes.

    Put your amazing creation into a wrap alongside amazing things like Jack cheese, Guac, Salsa, Rice, Pinto beans, left over BBQ sauce etc

    One shoulder will feed 4 if you bulk up the burrito a little.
    Was absolutely amazing.

    @ Law.. Sounds lovely. Have done it many times. Pulled pork, Homemade slaw and some corn on the cob.. Washed down with a nice bottle of ale.

    Another winner is slow roasted shoulder of lamb. Blitz up some mint, (lots of) garlic, cumin and olive oil, rub over the shoulder and leave marinate over night. Cook for 4 - 6 hrs @ around 130', take out of oven and rub remaining marinade over and finish on a charcole BBQ. Serve with hummus, cous-cous and some Riata.

    Made some fresh pasta last night with Chard Force and it was delish. So easy, once ya have a pasta rolling machine!

    Have some jerk chicken for tonight. Been marinating since about 6 o'clock yesterday. Can't wait!!

    Good call! It's never a bad time for good steak.

    I just had My New Favorite Quick Pasta Thing, ie
    boil or steam about half a head of broccoli until it's cooked but with a bit of bite
    fry an onion up, add chopped garlic, chilli flakes and about half a tin of anchovies (chopped), fry a bit more and then add the broccoli
    heat it through and serve mixed with pasta (any shapes the same sort of size as penne) and freshly ground pepper and plenty of parmesan.

    Sounds good, some good olive oil in there would be nice. Ricky Force does something similar I think?

    Cornish Pasty. Beef Skirt, Potato, Carrot & onion.. Pretty dry, to be honest.

    First time making one. Needs lots of tweaking but defo has lots of potential. Could be excellent travel food aswell!

    is good, as is anything by Madhur Jaffrey.

    Don't know about websites.

    Daal is very easy ie simmer red lentils for ages with a pinch of turmeric, a slice of ginger and a pinch of salt, when it's pretty much ready, cook up some other spices (cumin, coriander, mustard seeds, chilli, garlic etc) in oil and mix them in.

    My favourite thing with Indian food is preparing a couple of the simple vegetable dishes and dishing them up with raitia, chutney etc. Also, if you can find them (and don't mind the fact that each one takes about 20 minutes off your life expectancy), shana frozen parathas are buff - they're frozen dough and you cook them in the pan to get proper fresh paratha rather than frozen bread that you defrost to get slightly dry bread.

    Has anyone ever made really good (ie soft and puffy) naan bread? I always end up with something like a glorified foccacia.

    I some how managed to balls up a dhal when I was trying to make a dhansak.
    I soaked the lentils over night and cooked them well but they were still pretty hard.
    Must give that another go some time.

    I do, but to be fair I knicked it from Charlie..

    I make a small well of Olive oil in the side of the pan, then shallow fry a clove of Garlic and a few diced Anchovy fillets. Once the Garlic has turned a bit dark I remove it - usually at that point the diced fillets have dissolved into an almost paste. I then turn up the heat and get the pan very hot - I throw in the Broccoli and wack a lid on so the florets char and steam at the same time. When the Broccoli is ready, I mix it with pasta. Then I press out the cooked Garlic clove into a paste and mix through the entire dish along with a good amount of decent Olive oil, Parmesan. Then I season to taste..

    Last time around I cooked off some Bacon Lardons and threw them in too. Massive win. And massively cheap

    I made my first loaf of brown Soda bread 2 weeks ago. So simple! So good... Came out perfect!

    Gonna get a Sourdough starter on the go soon. Always wanted to give it a go..

    Shahi mushroom and pea curry

    Ingredients
    Mustard seeds
    cumin seeds
    Turmeric
    green chilli
    asafoetida
    onions
    cashew nuts
    almonds
    milk
    mushrooms
    peas
    garlic

    method
    Crush an onion in a mixer. Take 10-15 cashews and almonds each, crush them but not too finely. Put some oil in a pan, add the mustard seeds, cumin seeds, asafoetida, turmeric, green chilli and curry leaves and fry for 30 seconds then add a finely chopped onion and fry until it until it becomes reddish. Now add the fine paste of the other onion and the garlic. Fry this until there in another change and the onion is cooked. Now add the chopped nuts, cook for a few minutes. Finally add some milk to make a thick gravy. Now add the mushrooms and peas and cook until the mushrooms and peas are soft too eat, add a pinch of salt

    Took me a couple of goes to get this one right, but it is nice

    I made a pretty lovely summery salad tonight.

    I used a peeler to cut ribbons of courgette, then cut asparagus into thin strips, top to toe.
    Blanched the asparagus for a minute and added in with the courgette strips.
    Zest and juice of a lemon, decent pinch of salt and a good grind of black pepper, finely sliced chilli and a few mint leaves chopped up pretty finely too.
    Then at the end, a few shavings of parmesan.

    Bloomin' lovely!
